It used to be my least favorite ingredient to use in a recipe was Chipotle Peppers; not because I don’t love them, because I do, but because I got tired of opening a can, using just one or two peppers and throwing the rest away.

Then one day I was watching Rachael Ray and she shared this fabulous little tip… “Stop throwing away partial cans of Chipotle Peppers in Adobo Sauce. Simply freeze the leftover Chipotle Peppers in a freezer baggie and the next time you need them, just slice off the amount you need and return the rest to the freezer. No more wasted peppers!”

I love the idea about freezing the chilis in adobo. I never wanted to open a can because I knew it would go to waste.

easiest way to freeze is as follows
1) Puree in food processor or blender unused chipolata w adobo
2) take a standard ice cube tray and put piece of plastic wrap over ice cube portion. This is VERY important. Failure to do this will result in funky tasting ice.
3) spoon a tablespoon of pureed chip. into each well of ice cube tray.
4) freeze over night till solid, unmold and put cubes into ziplock bag.
5) on average a chopped chip. pepper w adobo is 1 tablespoon. So when needed add one cube per pepper/tablespoon required.
