Eye Protecting Spinach Mango Dream Smoothie

Mango’s are one of my all-time favorite fruits and when mango and spinach are combined in a smoothie, the body’s ability to absorb their antioxidants, particularly lutein and xanthein, TRIPLES!

This is good news since together these nutrients reduce the risk of cataracts by 72 percent and lower the risk of age-related macular degeneration (AMD) by 67 percent.

How’s that for a smart smoothie breakfast? 

Makes 2 Servings:

BLEND:

  • 2 cups fresh spinach, washed
  • 1 banana, frozen (I cut mine into chunks before I freeze them)
  • 1 cup peeled and chopped mango
  • 6 natural almonds
  • 1 cup fat free soy or rice milk
  • 1 cup fat free vanilla yogurt

Combine everything in a blender (I recommend Vita-mix) and blend til smooth.

In case you’re worried about the bitterness of the spinach, you won’t even notice it since the delicious, sweet mango and ripe banana are the most powerful flavors in this drink.

Sorry Ronnie, but when I was doing that on my blog posts I found I didn’t have time for anything else. You can always figure it out yourself by going to http://nutritiondata.self.com. Create an account and they have a tool that will allow you to calculate the calories/fat/nutrition in your recipes. It’s a great resource.

Hi Kathy, it’s yummy, isn’t it!!! I know a lot of people are surprised at how delicious it is, but it’s absolutely one of my favorite smoothies and so healthy for us too! The recipe makes 2 servings and I’ve edited the post to indicate that. Thanks for pointing it out to me that I missed it.

Hi Claude, Thank you for your sweet comments. I often think the same thing about my own “problems” … when I see what others have (and/or are) going through, I realize my journey has been light… just heavy enough to turn me to God’s glory and faithfulness! So far as RVing, yes, we still are, though we’re stationary in Portland through the winter. We’re looking forward to summer when we’ll head back out to the beach. That’s the nice thing about having a movable residence … you can literally live wherever you want to live … stay as long as you like … and move on when your heart says GO! Don’t be afraid, my friend. I just found this recipe from a google search for “mango spinach smoothie”. I would recommend this smoothie to anyone who loves delicious food.

I have a long list of green smoothies, but none of them require mangoes and I needed to use some mangoes that were starting to get long in the tooth. Now I’ve added this “dream” smoothie to my list. (I used 1% organic milk, BTW.) Cheers!
